Head Waiter
The Head Waiter is responsible for a designated section of tables within the dining room. They supervise and coordinate the activities of the assistant waiters assigned to their section.
- Department: Front of House / Dining Room
- Functional Relationships: Entire dining room staff
- Reporting To: Director, Restaurant Manager
Key Responsibilities :
Setup & Mise en Place
- Clean and polish glassware, chinaware, and cutlery
- Prepare table layouts according to reservations
- Set tables
- Set up service stations
- Inspect and maintain cleanliness across dining areas
Service
- Present menus and wine lists
- Advise guests on menu choices and provide detailed dish information
- Promote menu items and specials to guests
- Take customer orders
- Deliver service following establishment standards
- Tray-serve beverages
- Process orders and accurately transmit them to the kitchen, noting any special requests or dietary restrictions
- Ensure timely replenishment of bread, drinks, etc.
- Clear and reset tables
- Master presentation, carving, and flambéing techniques
- Guide and assign tasks to assistant waiters
- Manage billing and handle payments for tables within their section
Guest Relations
- Welcome guests upon arrival
- Escort guests to their table
- Listen to guest needs and address requests promptly
- Ensure complete customer satisfaction within their section
- Tailor welcome and service style to different types of clientele
- Resolve customer concerns within the scope of their authority
Required Competencies:
Technical Skills & Knowledge
- In-depth knowledge of table service rules and techniques
- Customer-centric approach to all tasks
- Ability to handle real-time incidents or service disruptions calmly
- Strong organizational skills to minimize guest wait times
- Thorough knowledge of dishes, ingredients, and the beverage menu
- Bilingual (Fluent English + local/secondary language)
