CHEF DE PARTIE

The Chef de Partie is an experienced, versatile line cook responsible for managing a specific section of the kitchen.

Department: Kitchen 

Functional Relationships: Entire kitchen staff

Reporting To: Executive Chef, Sous Chef 

Key Responsibilities :

Culinary Production

  • Prepare dishes while highlighting product quality
  • Prepare both cold and hot dishes
  • Set up for service 
  • Ensure consistent product quality within their section
  • Inspect and organize inventory/goods for their section
  • Prepare, plate, and send dishes relevant to their section

Management

  • Coordinate the team’s work within their section
  • Organize and supervise the work of demi chefs de partie, commis chefs, and apprentices
  • Enforce and monitor compliance with hygiene and safety standards
  • Foster and maintain team cohesion and motivation

Operations & Inventory Management

  • Manage stock levels and inventories
  • Contribute to achieving quality and cost control targets for products served by their section
  • Apply food safety and hygiene standards (HACCP)
  • Properly package and store products
  • Inspect the quality of raw materials and ingredients used
  • Regularly monitor and log storage temperatures

Qualifications & Requirements :

  • Vocational / Culinary Degree 
  • Proven track record of successful professional experience
